Ingredients
Stingray
Hi Mountain Seasonings Gourmet Fish Brine
Hi Mountain Seasoning Taco Seasonings
Favorite taco toppings (tomato, lettuce, shredded cheese, avocado, sour cream)

Directions
1. Cut and skin stingray wings
2. Prepare and apply the Gourmet Fish Brine according to the instructions.
3. Rinse the ray. Soak in water for 30 minutes. Rinse again and air dry for 1 hour.
4. Preheat pellet grill to 225? F.
5. Season with Hi Mountain Seasonings Taco Seasoning on all sides.
6. Smoke until the internal temperature reaches 145°F.
7. Let cool, then shred meat like pulled pork.
8. Mix in additional Taco Seasonings.
9. Sauté shredded meat briefly in olive oil until warm.
10. Build tacos with your favorite topping and enjoy!
